Adding sherry and horseradish to cheddar cheese adds just the kick you need for the perfect pub cheese recipe. This is a recipe for The Golden Bee Cheese Spread from the English Pub at The Broadmoor Hotel, the most famous resort in Colorado.
The Broadmoor Hotel Is a luxurious 5-star hotel resort at the base of Cheyenne Mountain, in Colorado Springs. What a treat to have Brunch at the Broadmoor.
It was my birthday and my request to celebrate was to spend it with Greg, Cauleen and the boys for the most special Sunday brunch experience that I know of in Colorado. The elaborate brunch at the Broadmoor Hotel displays over 150 enticing choices complete withsculpted ice and live piano music. It was a perfect day in so many ways. Let’s take a look.
The skies were blue, the temperature mild and the Broadmoor Hotel stately. Just an hour South of Highlands Ranch, it’s a wonderful day trip. One can wander the grounds, play golf, enjoy a luxurious spa experience, browse gift shops and boutiques.
Or like us, enjoy their famous Sunday brunch. Served in the Lake Terrace Room. It takes Broadmoor chefs all week to prepare the food for this extravaganza.
And if we weren’t full enough. Cameron enjoying a Hot Fudge Sundae from the Dessert Bar.
And a complimentary birthday lemon cream cake dessert. And yes, that Happy Birthday Banner is chocolate.
It’s tradition that after such indulgence that we take a walk around the lake. This photo is shot looking back at the main building.
About a block east of the main complex is the well-known Golden Bee pub.
The Golden Bee is famous for freshly prepared pub food, and yards of the finest ales from an extensive collection of English and Irish drafts.
The Golden Bee has been a staple gathering place at The Broadmoor for over 50 years. There are so many things to love about it.
First of all, when you walk through the doors you are transported toearlier time and place. The interior is made up of all of the original fixtures from a 19th century English pub. Acquired by former head of The Broadmoor, William Thayer Tuttit wasre-assembled here in Colorado Springs.
And then there’s the bee wallpaper in the bathrooms (great touch) and the customary flying beeembroidered stickers to proudly display on your lapel for bragging rights that you’ve enjoyed the experience. If you’re lucky enough you can get a collectible seasonal version. They gave me the latest from this season’s St. Patrick’s Day celebration.

We got the recipe from the pub. While yours may taste similar, here is their recipe.

1/2 lb. Butter
1 pt. mayo
1 1/2 Oz Worcestershire
3/4 Oz Tabasco
4 Oz Sherry Wine
1 Oz Dry Mustard
4 OZ Lemon JuicePlace butter in VCM (Variable Control Mixer) and let soften on high for 5 min. Add the cheese until a soften paste like consistency forms. Add remaining ingredients and mix in VCM until smooth, keep in mind to scrape bottom and sides well so all gets incorporated. Do not overmix. Place in buckets and label, FIFO properly. In the mid 1980’s I was a chef at the Broadmoor’s main kitchen where the cheese spread for the Golden Bee was was prepaired. Back then the Golden Bee did not have a working kitchen, most of their food was prepaired in the main kitchen including the French Onion Soup. I was responcible for both. The cheese spread back then consisted of nothing more than American Prosessed cheese, some White Pepper, Sherry and some Worchestershire Sauce blended in a large food proccesor, a little mayonaise to smooth it out.
Thats my story and Im sticking too it!!!Reply

Lea Ann, I didn’t have the Golden Bee Cheese when I stayed at the Broadmoor several years ago, but I’m sure it’s very good; *everything* was good. I love that place! Usually after four nights anywhere, no matter how lovely and luxurious, I’m ready to go; but I felt so at-home at the Broadmoor, I didn’t want to leave!

We’ve been going to the Broadmoor for 30 years. It’s just such a lovely place. They know how to do it up right! The Golden Bee is about a block east of the main building. You have to hunt for it or know it’s there.

We stayed at the Broardmoor for our 41st wedding anniversary and enjoyed the resort very much! One evening we had dinner at the Golden Bee and drank one of those large glasses of beer–glad we were able to walk back to the hotel and not drive–lol. This cheese was delicious and I’ll love serving it at barbecues this summer, Lea Ann!

Big happy birthday wishes Lea Ann. Looks like you’ve chosen THE perfect place to celebrate. The ice sculpture brought me back to Houston and the Warwick Hotel where we belonged to their club in the penthouse. Grand old hotels are so special and I’m so happy you spent it with those you love. I must try the sherry cheese spread. I’m very fond of cheese spreads.
