First off, the recipe makes a lot. So, you'll have plenty leftover for easy lunches or to re-purpose in other tasty recipes like pork stuffed peppers.

One of the go-to dinner recipes that I like to make is a pulled pork keto mac and cheese! It's cheesy and oh so good. Another is this super simple pulled pork tomato melt.

The inspiration for this recipe came from my eggplant tomato appetizer rounds. It's an old recipe that I came up with to use up the summer garden produce.

I had actually forgotten about my eggplant tomato rounds until I was browsing the site for an idea to use up leftover pulled pork.

It's so yummy!

In fact, this pulled pork tomato melt recipe reminds me a lot of pizza. I guess you could say it's like a pulled pork pizza bite.

No matter what you end up calling these tomato rounds, one thing is for sure. They are super delicious and are sure to be a hit as an appetizer at your next party.

They are perfect for snacking on New Year's Eve or Superbowl Sunday.

It is a great way to use up some extra pulled pork.

Ingredients

There are just four simple ingredients in these little pork melts. You might have what you need in your refrigerator already.

Tomatoes

I used 5 medium tomatoes and sliced them to about ¼ to ⅓-inch thick. If you are going to use large garden tomatoes, you might get even more slices out of them.

Pulled Pork

To make this simple pulled pork tomato melts recipe, you'll want to have some leftover pork. You could just make a batch and plan this as a dish for later in the week.

You can use any type of low-carb pulled pork that you make. This keto pulled pork recipe is super-easy and comes out with incredible flavor. Or, try leftover smoked pork tenderloin for a smoky flavor.

Fresh Basil

Fresh herbs have the best flavor! Chop up a handful of fresh basil to use in this recipe. You'll notice the difference.

Mozzarella Cheese

The fresher the cheese, the better it will taste. So, I suggest grating some fresh mozzarella at home.

If you buy pre-packaged shredded mozzarella, it might have hidden carbs and added ingredients to prevent the cheese from sticking together.

This is why I always prefer to grate my cheese at home.

Tips

  • Use a mandolin slicer to make your tomato slices all the same thickness.
  • Grease the parchment paper. Even though parchment paper is supposed to prevent sticking, the tomatoes might stick to the paper too.
  • Reheat pork with oil. Use your favorite keto-friendly oil to reheat the pulled pork on the stove. I prefer to reheat leftover meat on the stove because the microwave makes it too soft.

Slice Tomatoes Uniformly

The very first step is to slice the tomatoes. These are going to be used in place of bread slices on traditional pork melts.

Try to slice them all with the same thickness. That way, they will cook at the same rate.

Reheat The Pork

After your tomatoes are ready, reheat the pulled pork. The best way to do this is on the stove, but you can use the microwave in a pinch.

Add a little butter or oil to the pan and heat it up.

Add Pork And Cheese To Tomato Rounds

Now it is time to build the pork melts! Layer the pork and cheese on top of the tomato slices. Then, finish them with some fresh basil.

Bake The Pork Melts

Finally, bake them! It only takes about 10 minutes when you bake them at 400F. You'll know they are done when the cheese is melted, and they turn a slightly golden brown color.

These pork melts are the perfect lunch or light dinner, so all you need to serve with them is one of your favorite keto side dishes or a low-carb salad.

These crispy jicama fries are the perfect substitute for French fries. They will taste perfect with some pulled pork!

I love this baby kale and avocado salad. It has an earthy flavor that rounds out the sweet notes from the tomatoes.

If you are in the mood for something sweet, then mix together this spinach and strawberry salad. It is covered in a tangy vinaigrette and is wonderfully low in carbs!

Dairy-free variations

If you are dairy-free, you could leave off the cheese on the pulled pork tomato melt. But, then it really wouldn't be a melt anymore.

A lot of people think dairy is a staple on a keto diet, but it doesn't have to be. A lot of people are keto paleo which only allows ghee.

You can actually get a taste similar to cheese by sprinkling on some nutritional yeast. I was actually surprised by how well it does as a substitute.

Although I've been avoiding dairy, to get the right look on these, I topped each one with mozzarella cheese.

I've been trying a few dairy-free alternatives. Unfortunately, most of them have more carbs than I'd like. However, I think they are a great option.

I have done zucchini cheese, but it doesn't have a cheese-like texture. And, it doesn't melt or get gooey. So, I'd like to experiment with some other recipes.

Honestly, I prefer to make just enough to be able to eat in one sitting. While you can store leftover pulled pork, after you place it on the cooked tomatoes, it doesn't store as well.

What is the safe cooking temperature of pork?

Pork cooks to an internal temperature of 145°F. You'll easily surpass this temperature if you make it in the slow cooker.

Ingredients

  • 5 medium tomatoes about 700 grams, sliced
  • ¾ cup Low Carb Pulled Pork
  • 1 handful fresh basil chopped
  • 1 cup mozzarella cheese freshly grated
  • olive oil

Instructions

  • Wash tomatoes in cold running water. Wipe with paper towel. Slice in rounds, about ¼ to ⅓ inch thick per slice. Transfer to a cookie sheet lined with lightly greased parchment paper.

  • In a skillet over low heat, pour 1 tablespoon olive oil and reheat Low Carb Pulled Pork for a few minutes.

  • Lightly brush tomato slices with olive oil. Top with reheated pulled pork, chopped basil and mozzarella cheese.

  • Bake in preheated oven at 400°F for 8 to 10 minutes or until cheese is melted and slightly golden. Serve immediately.
