  • Stir the sugar (100g (1/2 cup, firmly packed) brown sugar), maple syrup (80ml (1/3 cup) maple syrup), honey (80ml (1/3 cup) honey) and mustard (1 tbsp dijon mustard) in a bowl until the sugar dissolves.

  • Preheat oven to 170C. Line a large baking dish with 2 layers of non-stick baking paper. Place an oven shelf in the lowest position. Remove all other shelves. Use a sharp knife to cut around the shank of the ham (1 (about 8kg) whole leg ham, on the bone), about 10cm from the end. Run a knife under the rind around edge of ham. Gently lift the rind off in 1 piece by running your fingers between the rind and the fat. Score the fat in a diamond pattern, about 5mm deep. Stud the centres of the diamonds with cloves (Whole cloves, to stud). Transfer to prepared dish.

  • Brush one-third of the glaze over the ham. Bake, brushing with glaze every 25 minutes, for 1 hour 30 minutes.

Do you glaze a ham before cooking?

For the best glazed ham, it’s important to glaze it before, during and after cooking. This glazed ham recipe calls for you to pour one-third of the glaze over the ham after prepping it. You save the rest of the glaze for brushing regularly throughout baking. This technique will ensure you get the thickest, stickiest, most caramelised glaze all over your ham.

How do you glaze a ham?

When you make your glaze, it looks like a lot, but you’ll need all of it to build up a sticky coating as it cooks. Once you’ve removed the rind of the ham, simply brush the glaze all over your ham. You’ll repeat this process throughout the cooking process.

What is a good ham glaze?

The heat and tanginess of any type of mustard work perfectly with sweetness (in the form of sugar, maple syrup and/or honey). We have tried glazes that get their sweetness another way, such as with fruit juice, marmalade, pineapple rings or apricot jam. You can also add alcohol to your glaze for extra flavour - bourbon and port are particularly good. Some ham glaze recipes call for a bit of spice from cinnamon, chilli or cumin - but we love the classic method of studding with cloves.

For a different flavoured ham for Christmas, try this cranberry & orange ham glaze recipe. Stir 2 x 275g jars Cranberry Sauce, 125ml (1/2 cup) fresh orange juice and 125ml (1/2 cup) port in a saucepan over low heat until combined. Strain through a fine sieve into a jug. Brush over the ham in step 3.
