Inever thought I’d meet a pie I could love as much as this homemade chocolate cream pie. Or this triple decker brownie pie. And afruit pie, no less.

But I did.

This lemon marshmallow meringue pie (which I suggestyou make for every pot luck, BBQ, and family dinner that comes your way this spring and summer) is seriously everything you’ve ever wanted in a sweet, creamy, summertime pie. It tastes like sunshine and marshmallows and baby unicorns (see? unicorns + pie totally works).

Why themarshmallow meringue? Why not just regular, old fashioned, egg white meringue?

Well, for one, I really dislike the texture of meringue in my mouth. I’ve eaten really excellent meringue, and I still can’t get past the texture. I don’t know why, it’s just a thing with me.

For two, I hatemaking meringue. It never, ever, everrrrrrrrrrrr turns out just right. And when it does, I can’t get it tostay just right. I’m sure with a little practice, I could make a decent meringue. However, I would refer you back to point one as the culprit behind my lack of motivation to master the meringue.

Reason number three, and most importantly, being: have you ever tried marshmallow meringue?? It. is. AMAZING. It has similar flavor to traditional meringue and a delicious fluffiness, but all without the weird sponge-like texture of whipped egg whites (no offense to the meringue lovers out there, my husband included).

And a homemade lemon fillingplus marshmallow meringue? It’s like the home run derby of pie. It’s like sunshine on a cloudy day. It’s sweet and creamy plus tart and tangy in every dreamy bite.

Ok. So we’ve talked about pie and baby unicorns. I think it’s finally time to talk about lip balm!

Lemon Marshmallow Merinuge

Homemade lemon filling, buttery crust, dreamy marshmallow meringue topping-- this is the lemon pie of your dreams!

Ingredients

  • 1pre-baked pie crust
  • 4 egg yolks
  • 1/2 cup fresh lemon juice + optional tsp lemon zest
  • 1/4 teaspoon salt
  • 1/3 cup cornstarch
  • 1 1/2 cups water
  • 1 1/3 cups sugar
  • 3 tablespoons butter

For the Meringue Topping

  • 7 oz jar marshmallow cream
  • 8 ounces thawed Cool Whip

Instructions

  1. In a medium bowl, mix together the egg yolks, lemon juice, lemon zest, and salt.
  2. Over medium heat, whisk together the cornstarch, water, sugar, and butter until mixture begins to thicken and boil. Boil for one minute, stirring constantly, and remove from heat.
  3. Pour half of the hot mixture into the egg yolk mixtureslowly and while whisking vigorously.
  4. Pour the egg yolk mixtureback into the hot mixture,continuing to whisk vigorously.
  5. Return to a boil, and allow to boil for one minute. Stir constantly.
  6. Pourpie filling into the pre-baked pie crust.
  7. Use an electric beater to whisk together the marshmallow cream and the Cool Whip.
  8. Spread the meringueon top of the pie. Chill for at least 4 hours before serving.
