Back then, many of the dishes included meat, but over the years, she and I have put our heads together to come up with some amazing meatless Asian dishes that are truly healthy and reminiscent of earlier times when Asian meals included very little meat and were much more plant-filled than they are today.

Gluten-Free: Many, but not all, of the recipes on this list are already gluten-free because we tend to use rice and rice noodles most of the time. For the recipes that use udon noodles made with wheat, you can simply substitute rice noodles in their place.
